Highlights
Three wineries per day was our magic number, or two if you're hoping to spend time exploring other attractions in the area.
Some wineries provided excellent information on the wines and estate along with each pour, while at other locations you may have to ask. We'd highly recommend asking about the wine styles and the history of the estate as it certainly enhances the experience, and your appreciation for the wine.

Days 1 to 2
Niagara-On-The-Lake: 2 days to see the sights and see most of the wineries.
The main town is an ideal base, to walk around the historic town, see the local shops and restaurants. There are 5 tastings and 2 tour deals to explore in this area, and dozens of other wineries without credit card deals. Fort George is also an interesting stop.

Days 3 to 4
St. Catherines: 2 days see some nature and more wineries west of the city.
There are numerous lesser-visited wineries between St. Catherines and Grimsby, great for shorter day-trips from Toronto.
We visited each one that offered Niagara winery benefits through Visa Infinite, plus a few hikes and waterfalls in the area.
We got 2 for 1 tastings at: Henry of Pelham, Sue-Ann Estate, Flat Rock Cellars, Thirty Bench, and Rosewood Estates. Hidden Bench also offers a 2 for 1 tour.
Ball's Falls and Decew falls were great breaks for a short hike in between wine tastings. We stayed in St. Catherines for restaurant availability and more affordable stays.
Anything you would add or do differently?

Some deals are certainly better than other's - now that we've documented the exact details of each deal we'll be returning to our favourites!

Tastings at Flat Rock, Sue-Ann, Henry of Pelham, and Stratus were all great value.

Inniskillin and Thirty Bench tastings were excellent too, just a little more expensive.

In terms of tours, both Peller Estates and Trius were great value as well for the excellent tour.
